stalk celery, chopped

1 cup

frozen bell pepper and onion strips, thawed

Cajun seasoning

1 can

(14.5 oz.) fire-roasted diced tomatoes, undrained

(12 oz.) HEINZ HomeStyle™ Caramelized Onion & Thyme Gravy

1 cup

long-grain white rice

1 cup

water

1 can

(15.8 oz.) black-eyed peas, rinsed

Instructions

Step 1

Heat oil in large nonstick skillet over medium high heat.

Step 2

Add celery, bell pepper and onion strips, and Cajun seasoning; cook and stir 5 minutes. Add tomatoes, gravy, rice and water; stir.

Step 3

Bring to boil, stirring frequently; cover. Simmer over medium-low heat for 20 minutes or until rice is tender.

Step 4

Stir in peas; cook for 2 to 3 minutes or until heated through, stirring frequently.

Step 5

SPECIAL EXTRA: Chop 2 tbsp. of fresh jalapeño pepper. Stir it into the ingredients in skillet along with the celery, bell pepper and onion strips, and Cajun seasoning.
