500 g

Baby new potatoes

Rashers back bacon, cut into thin strips

1 tsp

Vegetable oil

Spring onions, sliced

1 tbsp

Finely chopped flat leaf parsley

2 tbsps

Mayonnaise

Instructions

Step 1

Boil the baby new potatoes for 15 minutes until tender. Cool under running cold water and drain well

Step 2

Meanwhile fry the bacon in the oil for 5 minutes until crispy

Step 3

Mix together the potatoes and bacon with the spring onions, parsley and mayonnaise, season well and serve.
